Anyone? Want to learn how the notes etc fit together more in depth kinda stuff.

A good basic one, and probably one of the most used theory books is Tonal Harmony by Kostka and Payne. That will give you a great general discourse. After that, there are several options that go in different directions (counterpoint, composition, orchestration, form, etc.).
