Pumpkin!
Anyone have recipes for pumpkin? It is suppose to be relatively low calorie and carb and I think it would be a great opportunity to kill my sweet tooth in a healthy manner. So, anyone have any recipes that include pumpkin, with few carbs and calories?

oh... what CAN"T you do with pumpkin! I LOVE the stuff, eat it every day!  Keeps my bowels happy! here are some of my favorites:
~Cream of wheat, soy milk, pumpkin, vanilla whey, cinnamon
~Soy milk, whey, pumpkin, blended over ice
~WW wrap, pumpkin, cinnamon, chicken, greek yogurt wrapped up
~oatmeal, pumpkin
~Cottage Cheese, pumpkin, raisins, walnuts, flax, honey, cinnamon
~Coffee, pumpkin, whey blended over ice
~homemade protein bars with pumpkin
~made yummy pumpkin bread the other day! I'll post the actual recipe later (left my notebook with it in it at work) but I'll see if I can attach the pic.
Its always a good choice IMO. I LOVE it and it is very filling! Sometimes I just take a bowl of it with some cinnamon, stevia and enjoy!

heres another and my new fav:
1 1/2C kashi go lean
3 egg whites
1/4 cup wheat bran
1 scoop vanilla whey (use 2 if you want)
1/4 cup pumpkin
1 tbsp Flax
Cinnamon
stevia
bake at 350 until you can stick a tooth pick in and it comes out clean!
4 big bars- 150 Cals, 4g fat, 19g carb, 18g protein

I actually make a pumpkin soup, but it is savory.
I usually do a can of pumpkin, with equal amounts chicken broth, 2 tbsp of low fat yogurt, clove garlic, 1/4 of an onion and a little bit of honey to make it slightly sweet. Boil it all up together until it is warm and thickened....goes really well with chicken breast!

Hey, just found this thread by searching for PUMPKIN  I have just started eating heaps of pumpkin, I just cut it up into chunks, put it in a bowl with some water, cover it and microwave it for 15 minutes, it goes all nice and soft. Then I cover it in gravy from those packets, they are like 60 calories in the whole packet.
The other day I ate 950 grams of pumpkin and an entire packet of pre made gravey and it was 300 calories... I could hardly eat it all

omgosh your pumkin bread looks so tasty!! I'll be keeping an eye out for the recipie  Could you post the recipie for you pumkin protein bars too? I've been thinking about trying to make some...one with pumpkin sounds good.

I love pumpkin and ever year at this time I am obsessed with it. Its hard to resist the pumpkin goods in the bakery at the grocery store I work at but now I add pumpkin to a lot of my clean foods. My favorite is pumpkin protein shakes.

Hey there! I have these in the oven right now, thank you!! I used a mixture of kashi crunch, fiber 1, and vector...However, I didn't find it looked like the bars would be that massive if there are 4 of them? Maybe it's just me! My magic bullet was struggling to mash it all up hahaha  I take it the breakdown is for each bar?
Thanks again for the awesome recipe, I am addicted to pumpkin now!

Ok...this is my favorite thing to do with pumpkin.....
get a can of pumpkin, mix it with cinnamon or pumpkin spice, add splenda to suit your taste buds, and then voila!
It is so yummy and only has 160 calories total! Hope you enjoy it!

I take ff greek yogurt, a bit of canned pumpkin, pumpkin pie spice and splenda and mix. Top it with some kashi go lean and its quite the dessert. =)

Here is a recipe that I have made before and even my kids love it!
Pumpkin & Chocolate Chip Pancakes
Makes 4 to 5 Servings (about 14 pancakes)
Ingredients:
1 cup all-purpose flour
1/2 cup whole wheat flour
2 tablespoons ground flaxseed
2 tablespoons granulated sugar
2 to 3 tablespoons mini chocolate chips
1 tablespoon baking powder
1/8 teaspoon salt
2 large eggs, beaten
1 1/3 cups 1% lowfat milk
1/2 cup canned pure pumpkin
1 teaspoon vanilla extract
4 teaspoons canola oil
Directions
Whisk together the all-purpose flour, whole wheat flour, flaxseed, sugar, chocolate chips, baking powder, and salt in a large bowl until well combined. Set aside.
Whisk together the eggs, milk, pumpkin, and vanilla in a separate bowl until well blended. Pour the liquid ingredients over the dry ingredients and stir until just moistened.
Heat 1 teaspoon of the oil in a large nonstick skillet or griddle over medium-high heat. Pour the batter onto the hot skillet using a 1/4-cup measuring cup, forming 4-inch pancakes. Cook until bubbles begin to appear on the surface of the pancakes and the bottoms turn golden brown, 3 to 4 minutes. Flip and cook until golden brown, an additional 2 to 3 minutes.
Repeat with the remaining oil and batter.
Nutrition Information per Serving: 320 calories, 10g fat (2.5g saturated, 1g omega-3), 400mg sodium, 46g carbohydrate, 4g fiber, 11g protein, 80% vitamin A, 25% calcium, 15% iron

The pic I posted is my bread... lol the bars I make are pretty big! In a 9x9 pan I get three.  thats why I like them so much! the macros are for each bar but you'd have to adjust since you used different cereals.  the kashi crunch is a lot harder-that might be why you had trouble mixing it... lol

Pumpkin Bread
Ok- sorry for the delay, here's my Pumpkin bread recipe:
2/3 cup soy flour (I buy it at super walmart)
1 cup wheat flour (all-purpose)
1/4 tsp baking powder
3/4 tsp baking soda
1 1/2 tsp cinnamon (I used more because I LOVE it)
1/4 cup smart balance butter
1 cup sugar (1/2 cup splenda*what I used)
2 egg whites well beaten
1 can (15oz) pumpkin
2 tbsp water
*Sift and mix flours
*measure other dry ingredients except sugar, mix with flours. Set aside
*Cream butter and add sugar gradually, add eggs and beat until light. Blend in pumpking and water
*Add Dry ingredients in two portions, blending well after each addition.
*Bake in greased 9x5x3 loaf pan at 350 for 65-70 mins
*enjoy! Makes 12 servings!
*you can add whey, just figure it into your AP flour.

Oh ok! I thought I read that you calc'd the macros on 4 bars, so yes, 3 bars would be much bigger! They turned out pretty good, but I think I'll try going with just one kind of cereal next time lol.
