I need YOUR help!

Alright everyone, I want YOUR opinions..
I started keto 2 weeks ago. All summer I ate like ****.. anything I want, whenever I wanted. And honestly.. I didn't really gain very much, I just always felt bloated and gross all the time.

So I figure after doing a DRASTIC change to my diet, fat would just be melting off.. well wrong.
In the past 2 weeks I've lost about 4-5lbs.
Now I know a lot of you will say that's good.. but I mean, most people lose A LOT the first week.. and making such a huge change..

Basically I'm eating lots of eggs, cheese, sausages, bacon, chicken, salmon, almonds, PB, peanuts, almond milk, whipped cream..

I also chew a lot of gum.. So I thought maybe this week I should try to cut that out, as well as peanuts/peanut butter since some people find that that stalls their weight loss..

But what do YOU think? What can I do to speed things up a bit?
I'm feeling kind of discouraged since I don't see a very big change from when I was eating whatever I wanted.. to actually watching what I'm eating ALL the time..

I work out about 7-10 hours a week doing things like gymnastics training, kickboxing, karate etc.

I also watch my calories to make sure I'm eating about 1600 a day.

this is my opinion as I have lost 10 lbs in the first 4 days of this diet. And I have done the diet before with 35 lbs lost in 40 days
I do not eat PB
I do not Eat a lot of heavy Whipping cream maybe some in coffee
I eat Lots of red meat
Fish 3-4 a week ( i should eat more )
I take a flax oil and Fish oil supplement
I Eat a ton of green veggies
tons of eggs
Olive Oil
butter
I stop Eating 4 hours before bed (I dont care what people say I want to rest not digest food)
I only eat bacon and sausage if its uncured and not a mention of any type of suger (cured with) I eat that usually only at breakfast time or up till about noon
I drink almost 2 gallons of water a day
I drink Coffee and tea up till about 3 pm
I workout out with heavy lifting and cardio to burn glycogen 9no moe than an hour a day right now)
NO carb Ups (on that 35 lb loss, obviously just started this time)

I eat until I am full an then no more if I need to snack almonds, mac nuts or cream cheese helps curb the cravings or need to eat more.

My thought also is this FAT, FAT, FAT and more fat with protein and water.
The veggies are just fillers to me and I eat to make sure this is as healthy as it can be.
