I've injured my toe a couple of times, my ankle more times than I like to admit, and mindi's right, three or four weeks should be adequate--but if you stay off of it, it'll be quicker

also, get some arnica gel (find at health food stores, and the like) and apply it 2 or 3 times per day--that helps ALOT. When I sprained my toe, I also did the elliptical, just focused on pushing through my heel....
