    The glycemic index is tested with unmixed foods, on fasted subjects - hardly applicable to the manner in which those foods would be consumed.

    And, isocaloric servings of high- and low-glycemic carbohydrates have the same amount of extractable energy.

    I believe in the science behind the GI

    As stated previously, the problem (well not really a problem) is people don't (nor should they) eat a carb source in complete fasted isolation. Therefore it won't affect probably 90+% of the population. However, I am hypoglycemic and, even when eaten in combination with other foods, high and low GI carbs have different effects on me. I am sure this is true for diabetics as well.
    The main problem is people view it in extremes. They either put far too much stock into it or discount it altogether. Dealing only in Extremes. Call it being American.
