What's a good carb range for high carb, low, carb and no carb days for someone who is 5'11" and 195lbs? Thanks!

I know nothing about you, so its hard to say.
But I'll give you some general numbers and you can adjust from there according on how you progress.
Low days- Protein 220 / fat 70 / Carbs 80-100
Medium days- Protein 220 / fat 60 / Carbs 150-200
High day- Protein 200 / fat 30-50 / Carbs 300-400
Have one high day a week (on the day you train your most lagging body part), three medium and three low to start.

Well if you feel your metabolism is not very good you may want to start with that little of carbs.
Check out this article and create a diet for yourself, because you know your body better than anyone on here. Hope it can help.
