Basically what are the effects or roasting raw nuts, without adding salt, sugar or anything. It's just roasted nuts IMO taste a lot better than raw. But raw is usually cheaper so i was thinking about roasting them myself. Are roasted nuts exactly the same nutritionally to raw nuts? Or do they somehow change eg: less fat, more saturated fats, less protein or something like that? You read all this stuff about smoke point causing oils to turn into bad hydrogenated fats? Does the same thing happen when roasting nuts? If not i'm just gonna roast em. Btw any1 know how to roast em? Just chuck em on a frying pan? Or do u like chuck em in an oven?

Thx for the help. Do you know anything about whether roasting changes the nutritonal value or composition of the nuts like heating olive oil, etc to a too high temperature causes it to turn into hydrogenated oils?

While it comes down to the temperature and exposure time, high temperatures will damage the fats and can lead excessive advanced glycation end product (AGE) formation among other things.

Thanks for the help. I dug around at seems that dry roasting can cause some changes in the composition of the fats making it bad. I guess though if u drop temp's it should be fine?
