Here's how we do it in Texas.
I like my eggs with potatoes or tortillas, salsa, garlic, onion, peppers, cumin, paprika, and cilantro. You can prep up the mixture of dry ingredients the night before, then toss everything in a skillet for breakfast. Easy breezy.Last edited by cyde; 06-21-2009 at 06:51 AM.

Salsa and cheese, the best way.
My mom likes cottage cheese on a bagel with eggs
Pick any veggie and add it to eggs.**MISC Running Crew**

Slice up a banana... Pour the egg into the pan put half the bananas in the egg mixture. Cook one side. Flip. Then cook the other side. ( obviously ). Get some peanut butter and coat the egg with it... Then put the other half of the bananas on top of the peanut butter. Basically a peanut butter and banana omelette.
Also, I have been doing this. Get a peice of pita bread... I would recommend Joseph's flax pita bread ( you can find at wal-mart. ) Cook the egg place it on the pita bread afterwards and then put some salsa and cream cheese in there. It's really good.

I have been cooking my eggwhites with splenda and Da Vinci Sugar Free vanilla whisked in. It gives it a nice sweet flavor. Kinda like when you are eating at Denny's or something and you get syrup from your pancakes on or in your eggs. Quite good IMO. You could use hot sauce, bbq sauce, ketchup, cook them with salsa mixed in, the list goes on and on. You would be surprised by what tastes good with eggs.
