personally i would stay away from beef jerky. opt it for chicken breast, just cook a few pounds and put it in a plastic container and since your just driving and now really being active eat fibouris carbs such as vegetables

I agree with staying away from it in general, but eating once in a while won't kill you.
I love beef jerky...but to avoid the nitrites and salts and icky stuff that may shorten your life, I buy from here http://www.americangrassfedbeef.com/

a dehydrator is the best method for making jerky, but i just make mine in a convection oven..but a regular oven works too.

here's what i do -

- buy a lean cut of meat (the less fat the better b/c the fat will turn rancid)

- put in the freezer

- next day slice frozen meat against the grain 1/4 an inch thick and trim any visible fat (it's easier to slice frozen or semi-frozen)

- then i season..i just use sea salt, pepper and chili powder..but you can go crazy and use whatever you want

- put in oven for 8 -10 hours on the lowest setting possible ---- i place mine on a drying cookie rack to get better air flow with a regular cookie sheet below to catch the drippings

** if you have a regular oven..crack the door to promote circulation..the whole key to jerky is circulating air drying the meat.

hope that helps!! it's really easy and homemade jerky tastes 100X better than anything you can find in a store.
