Boneless Skinless Chicken Breast WITH Rib Meat...WTF?
Simple question, what the hell does it mean by "With Rib Meat?"
I went into my fridge to find a stack of 4 packages of chicken, about 4 lbs each, was ecstatic.
And then I found the usual little prints on the bottom
"minimally processed, 2% water, etc etc....With Rib Meat..."
What the heck does that mean, is it like, fattier chicken breast or something? Just a bit confused here...

If I'm not mistaken, the rib meat is the piece of meat behind the breast that doesn't look like it belongs.

wiki says:
"Some chicken breast cuts and processed chicken breast products include the moniker "with Rib Meat." This is a misnomer, as it is the small piece of white meat that overlays the scapula, and is removed with the breast meat"

USDA labeling policy states:
"When poultry breasts with ribs are boned and the resulting product contains portions of the scapula (shoulder) muscles and/or muscle overlying the vertebral ribs, they must be labeled to indicate that fact. Proper names for such products are —Boneless Breast with Rib Meat,“ White Chicken Meat or White Turkey Meat,“ or if the skin is left intact, —White Boneless Chicken or White Boneless Turkey.“ Product labeled —Boneless Breast“ without further qualification may not contain scapula or rib meat."

Yes. It's not like the minimal amount of rib meat would make any difference anyway.

it's basically the breast with the bone. They look like little ribs. It's cheaper than buying the plain breast.
