Bit of advice.
I know it's nothing to do with nutrition, but there is no where specific to it to post.
As a long term goal, how long would you say it would take for a natural bodybuilder to 5ft 8 about 140 pounds to reach say, 200 pounds at about 15% bodyfat? Mainly gaining one pound per weeks and by doing short term cutting/bulking, gaining one pound per but cutting in between to stay around 15% fat?

Yeah I was thinking like 3/4 years maybe, but I mean 200 pounds is alot of weight for 5ft 8 tall

Yes it is. I know that at that weight I would barrel out and just look too stocky for my liking. I think for 5'8, the 170-180 range ripped to the bone is beautiful.

Yeah, the only thing with me is, even though I'm only 5ft 8, I still have that long ectomorph look to my body/long legs, just wondering if I'd still look a big size at 170/180 pounds.

You will be pleasently surprised.
If you are ~10%, then yes, at 180 lbs you will look amazing. I am low 160 lbs. Check out the pics. Imagine another 10-20 lbs of beef on me. You get the idea...
