you can see my green veins through my skin. what is the cause of this and what can prevent it? is it a nutritional problem or something? am i malnourished?

Oxygen in blood, plus the skin color faints it even more making it bluish or green.

When I took biology in middle school we were told that the blood in your veins is a dark red/purple-ish color because there's little oxygen left. In high school biology I was told the same exact thing except the teacher said the blood is blue. In a college biology class I took (I needed some credits for science or I wouldn't graduate on time =/ ) the teacher said its blue.

The actual answer:
The observed colour is in part caused by the way light is absorbed/reflected by venous blood, and in part by the way it (light) is reflected back through the skin.
Higher energy wavelengths of light will have a greater ability to make the round trip through your skin, to the blood, be reflected, and be observed through your skin.
Blood is never actually blue. Ask a surgeon what colour deep veins are -- they're not blue. Blue veins are unique to ones observed through the skin.
De-oxygenated blood is a deep maroon, never actually blue.

Oxygenated blood=red
Deoxygenated blood=dark red
Deoxygenated blood is only shown as blue in anatomy charts to make it easy to distinguish from oxygenated blood.

because the blood aint oxygenated so its the colour that it would be without oxygen
and blood is only red when oxidised because of the haemoglobin (oxy-heamoglobin = red)
