Peanut Butter Cookies
1 cup peanut butter, creamy or crunchy
1 1/3 cups Splenda or other sweetner
1 egg
1 teaspoon vanilla extract
How To Prepare: Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

Hmm...macros are just a bit off for my Keto, but the recipe sounds great. How many cookies did this make for you? For every once in a while these would be nice, but too many in a day could shoot you overboard, watch out!
Here's what the ingredients I have would yield (entire batch):
1986 Calories
132g Fat
70g Protein
65g Net Carbs (32 net from PB, 32 from Splenda, and 1g counted in for the .5 carbs in a tsp of vanilla along with trace in the egg...damn Splenda with 24 carbs per cup)
As I said, every once in a while would be cool, but if you wind up with 10 cookies, that's 6.5 carbs per serving.
By the way, MuscelMom, I tried your bread recipe...tasty stuff!

Yeah, wasn't sure if it was Keto or not...didn't figure the macros out. I usually use stevia to taste.

i made these today. theyre ok if i have a sweet craving and it keeps me away from ice cream or other bad carbs that i cant eat. Im not sure how you came up with the calculation for these because doesnt splenda have less than 1g per carb? Im so confused on how to calculate ****...as long as i stay under 30g im good usually im about there but sometimes ill splurge and get up to 50g either way...ill make them again

Splenda claims to have >1g Carb per teaspoon.
However, if you contact spenda about their exact nutritional facts, they'll tell you that for One (1) cup of splenda, there are 24g carbs and 96 calories.
Much better than a cup of sugar, but on Keto you can't deny it. I'd rather know about it and stay in Keto than be blissfully unaware and get kicked out.

yea forsure ive had a rough time getting keto working with me so its good to know that. Now im even more aware of things that labels dont always say. Damn corporations being able to hide crap like that
