Chicken - Is this ok?

Ok, I know I'm probably over thinking this, but I've been wondering this for a while and so I'm just putting it out there...

Boneless, skinless chicken breast...heat about a tablespoon of olive oil...pan fry the chicken with salt and pepper only. Is that ok? Do you count the olive oile as a fat for the meal? Any other opinions on this?

ive cooked my chicken like that before and i dont see a problem with it at all....
but i usually buy a club pack of chicken, put in a casserole dish with pam spray or olive oil and load it with spices, hot sauce, mustard, basically any flavour combo i can think of and bake it...
it tastes great and you dont really need to keep an eye on it...
ive been loving greek chicken these days..
i mix olive oil, lemon juice, dijon mustard (not greek but i love the taste) minced garlic, dill, oregano and salt and peper and pour over the chicken and bake. YUM. i do the same for rice and chickpeas and add a little low fat feta and spinach. SOOO GOOD

Yeah, that sounds good. Mmmmmm...pan fried chicken in olive oil. I count the calories from the olive oil at about half from what I actually put in the pan, since some of it is left in the pan after cooking. It works for me, though someone may know a more accurate method. I figure if I stay consistent, it should be okay.

I prefer to use EVOO spray. Pam even makes an organic one.
Even though it says no cals I usually count it as a tsp which is 1/3 of a tblsp.

I would love to be able to bake my chicken, but every time I do, it comes out dry. 4-5 min seared on each side in the pan is the only way I can cook a juicy chicken breast.

And yes the fat counts. There's 120 cals in a tblsp and about 40 in a tsp.

Sidenote- I have also learned that I can get away with EVOO spray when I use caphalon cookware. The stuff doesn't stick. I stole a caphalon pan and a pot from my sister and that's all I use now. The expensive a$$ Le Creuset cookware I bought just sits in my cupboards collecting dust now. It's a shame really.

I agree with bebeklein. I use a spray as well, makes for less mess and less calories/fat overall.

Best investment though- a George Foreman or knockoff brand grill. Hands down my favorite kitchen appliance. Then you don't need a pan or oil!

A good alternative is to buy a Ziploc steamer bag and put the uncooked chicken in it, season, microwave for about 5 minute and voila- a fully cooked juicy chicken breast. Delish!
