It depends on what kinda keto you're doing.
Generally, the brain fog/weakness happens around day 3-5. For some people it can take up to two weeks which is why induction lasts this long for several types of keto.
I don't crave carbs at all, unless I get lazy and dont eat enough fat during the day. If that happens, come evening/night I start craving carbs.
Of course you crave carbs during your carb-up, but you get to eat them!
The mistake a lot of people make while cutting is they switch to keto and begin cutting calories/fat RIGHT AWAY. You can't really do that. You have to give yoru body time to get fat-adapted first, THEN you begin to slowly, systematically reduce cals/fats. That can make it harder to become fat adapted and the fuzziness/cravings can last longer because your body thinks you're starving it.
Ideally, IMO, you take two weeks to get fat adapted, and during that time, you spoil the body with an excess of healthy fats and proteins. It learns to burn fat comfortably because there is plenty of it. Then you begin to SLOWLY, GRADUALLY reduce cals/fats if you want to cut.
