Calories in 1 oz of NY strip steak?

I have an 8 oz. NY strip steak and am having trouble finding how many calories it has.

I looked online at Dailyplate.com and it varys from 38 calories to 70 calories per oz. How should I calculate this into my fitday.com?

Thanks. BTW, what does the 1/4" fat mean? Are they talking about the layer of fat on the side of the steak? Can I cut that off to save some calories?

Aren't caloric values usually for raw food? Wouldn't various cooking methods have different impact to the weight? i.e. how much water is evaporated, etc.
