    Sure thing brotha!

    Season generously with homemade rub 24 hours before smoking (helps to dry-brine it)
    For the cook, my favorite method is 225 for 5 hours with cherry wood...
    -2 hours unfoiled
    -2 hours foiled tightly with a tiny bit of apple juice in the foil
    -1 hour unfoiled to tighten up the bark... baste in homemade bbq sauce last 30min.

    I also put a water pan in my pit to help keep the meat moist.

    have you ever tried smoking a rack without using foil? i used to think it was a bunch of snobs just finding a reason to act better. after trying it out a few times i quit using foil on my ribs and prefer the end product. IMHO you get better bark and it's easier to get the "bite through" texture that wins competitions.

    tbh I like both methods. I do admit I get better bark without foil, though in my experiences the fat renders better if foiled. Maybe that can be solved by running the cook a little longer though? gonna have to give that a try

    God gave me shrimp. So I simmered their shells in butter, beer, worchestershire, hot sauce, and lemon rind. Then I sauteed the shrimp with onion, garlic, cajun spices, and finished them in the sauce.




    And a friend of mine gave me some really good ripe tomatoes. I knew what to do with those.
