I heard baking chicken increases protien as opposed to grilled.
Is that true? Don't understand how it would increase protien when its baked.
What are your thoughts on this ?

Maybe some of the grilled chicken slipped through the grill cracks into the charcoal and no one wanted to eat it. Otherwise, I have no idea.

It doesn't increase in protein amount.
HOWEVER, the percentage of protein by weight will probably increase due to fluid loss.
Hypothetical example:
Starting weight: 100 grams with 20 grams protein = 20% protein by weight.
End weight: 80 grams with 20 grams protein [unchanged] = 25% protein by weight.It is the mark of an educated mind to be able to entertain a thought without accepting it.

Since it does not lose or gain protein [unless you char some off] - just moisture and maybe a little fat from the little it started with, if it starts as X grams and Y calories with Z grams of protein, it still has about Y calories and Z grams of protein even though it may weight more or less.
While the food would need to be considered, raw weight and using raw nutritional values will likely be more accurate but you can still use cooked weight and cooked nutritional values. Whatever you do, just be consistent.It is the mark of an educated mind to be able to entertain a thought without accepting it.
