I just bought a big ol sack of white taters, i'm wondering how long they'll stay good for? My mom (yes my mom) says 2-3 weeks, a food storage guideline site says 2-3 months...Whats the verdict?

I asked my mom about this one also. She said that you can usually feel them when they go bad. I've had some that have even started roots before, but you just cut them off and they're good to go again. I've had them for over a month and used them, just depends on how fresh they are I guess.
I would think you could feel them get mushy when they're too far gone.

Well, I'm an Idaho boy where spuds are basic. They have big spud cellers half underground where they store potatoes for months before selling or shipping them off. Keep them in a cool, dark place (NOT the fridge) and they'll last for months. Even if they get a little rubbery they are still okay. Yes, cut off any roots that start to grow. You'll know if they are bad--brown spot inside or rotten smell.
