Tuna
I know that tuna is main staple for many of you, so can you give me some ideas of what you do with it to spice it up? Do you mix it with something else or eat it alone (ick!)?

I like to add stevia/yogurt and maybe a few raisins. Makes it really yummy. Or some days I add peanut butter, which is also delicious!  Honest! (sometimes the weirdest combinations make the best meals)

I like to mix it in salad, pasta, rice, on a wholegrain sandwich... I'm fairly unadventurous

I eat it in sandwiches (just tuna and brown bread), mixed with bown rice, with baked beans or plain haricot beans and half a stock cube, with wholewheat pasta or with chopped new potatoes and pasta (tomato based, low fat) sauce.

I like to make oatmeal tuna patties,,egg whites, oats and tuna..then cook like a pancake,,,a little salsa its delish

I have my tuna with either wholegrain bread, as part of a salad or with my rice I add a touch of chicken stock to it and that tastes better for me.
If you like the taste of tinned salmon better that may work just as good for you.

my brother actually made a sandwich w/ tuna other day and it was delicious...it tasted like it was gourmet. No mayo...ill have to ask him what herbs and spices he used and post it but all he did was put a little olive oil in a pan, added tuna from a can and some seasoning and cooked it until it was lightly brown and toasted the bread the same way as well...simple but delicious.

I mix mine with canned salmon. Well, i do.
I also drop it in my eggs witha little cheese , and the omelette veggiest of your chice (mush room, black olives, peppers, onions etc) and a little salt , for a kinda fish omelette.
one tasty protein packed fixin.

Southwestern Black Beans and Tuna
(4 servings)
1 clove garlic minced
1/2 onion diced
1 tsp oil
2 tbsp lemon juice
2 tbsp jalapeno peppers (diced)
4 tbsp chopped green chilies (in small can)
19 oz can black beans, drained and rinsed
2 cans (120 grams drained) tuna, drained ( I used light tuna - skipjack)
19 oz chili style tomatoes
Fry garlic and onion in oil about 4 minutes (until onion is soft). Add remaining ingredients and cook until hot.
per recipe: cals 793 fat 10.68 carb 100 fiber 28 protein 84.8
per serving: cals 198.25 fat 2.67 carb 25 fiber 7 protein 21.2

I use a Tbsp of light mayo (does everybody think that's BAD?) and then add some sliced black olives and hot yellow banana peppers. Sometimes I'll have this on a bed of spinach, sometimes on whole wheat bread. Love it.

I actually make "tuna patties" they are a quick lunch and reheat in the microwave pretty decently. You can add pretty much any spices you have in your cupboard and it will taste decent.
- 1 can of tuna
- lime juice
- pepper
- cilantro
- cayenne pepper
- 1 egg white
- 2 tablespoons diced onion
- 1 teaspoon olive oil
Basically you mix all the ingredients together and make them into uniform patties. Put in a pan and "fry" them for abut 10min until they are a little brown on either side. I generally eat with a side salad of some kind.
