Soup Recipes
I'm thinking about making some soup tomm. and was curious of everyone's favorite recipes. Its that time of year for some good vegetable soup!!

I made Butternut Squash soup recently, and it was soooo yummy.
1 stick butter (can sub out with olive oil)
1 med-to-large onion, chopped
1 butternut squash
2-4 cups chicken stock (or veggie stock)
Saute chopped onion in butter, until golden brown. Add chicken stock and bring to a boil.
Cube butternut squash and add to stock. Add water, as needed. Bring to a boil and cover. Simmer over med-low heat for 15-20 minutes. Check squash for tenderness. When at 'mash' consistency, sift butternut squash to a bowl and transfer to food processor (alternately, use handheld mixer or masher). Blend to a paste, then return squash to chicken stock. Cook down soup to desired consistency.
You may add some cinnamon, salt, and pepper, to taste. It is sooo yummy, right now, and very filling.

Lost 30 lbs in 2007. Gained it back, because I stopped monitoring my health.
Lost almost 45 lbs in 2008 so far. It shall remain monitored, and it shall be maintained, for good.

I make the above all the time (have it on one of my restaurant's menus right now), and it's really good with apples and some calvados whipped cream on top.
Other seasonal favorites of mine include pumpkin soup with walnut pesto garnish, or curried sweet potato.
Ummmm... I can probably list like hundreds of soups so what do ya like/have on hand?

Oh, here's another good fall soup I like to make: white bean w/roasted garlic and escarole.

Ohhh.... YUM! Nothing better than a chunky stew/ soup topped with avocado and cheese and served with a chunk of warm crusty bread!
There are some good 'diet friendly' recipe sites for 'quick soups' that I know of -

some recipes call for a TON of Parmesan, this one doesn't and its the closest I found to the one my grandmother always makes.. instead of shells you can use pastina or orzo.

Brussels sprout soup is so easy it feels wrong. Just boil half a dozen sprouts in a cup of chicken stock until they are tender, then blend till smooth. That's it. You get a lovely smooth creamy soup that tastes really high calorie, and isn't. It isn't even green. I've fed this to children who insist they hate vegetables, and they loved it.
