I have one with a light meal on off days, I just cut the post workout shake.

The best time to take whey is after workouts. It gets absorbed quickly and helps to repair muscle.
But make sure you get enough protein in EVERY day (on and off). You need about 150g of protein a day (1g per lb) preferably spread over 6 meals. You should be able to do this with real food like eggs, tuna, milk, chicken, fish, meat etc
