So I've been approached by an individual that knows I'm a fast typist... well he's handed me 15 written pages... which I can't possibly fathom how many typed pages it'll turn into. Essentially, I need to make a quote on how much it will come to. What is a realistic price per page to charge?

Tell him for $30.00, you'll type out the 15 pages (my guess is it will come to 5 pages typed, depending on space/formatting).
Then tell him for $50.00, you'll type out the 15 pages and promise not to randomly insert three profane words into the final copy.placebro@getrippednutrition.com

Depends on topic and type of paper but id say 6.50 a page... and do like a 75 cents deal after a set number of pages ex if 20 pages he gets 1.50 off??
