. Have a can of whipped cream and a tub of beyer's vanilla ice cream to finish up. It is boring to eat it plain, so I just spice up my morning oats with some happiness

Here's today's breakfast;
Omelette with six egg whites, mushrooms, red & white onions, green bell peppers, turkey breast and a slice of 2% sharp cheddar cheese. Also, double fiber bread w/ natty PB. 344 cals; 8g fat, 24g carb, 48g protein.
Took almost as long to type as it did to make.

Just for good measure, here's last night's dinner:
Roasted Vegetable-Rosemary Chicken Soup
Ingredients
* 1 cup (1-inch) cubed carrot
* 1 cup (1-inch) cubed onion
* 1 cup coarsely chopped mushrooms
* 1 cup (1-inch) pieces celery
* 1 cup (1-inch) pieces red bell pepper
* 2 tablespoons extravirgin olive oil
* 1 cup water
* 2 tablespoons chopped fresh rosemary
* 1/4 teaspoon salt
* 4 (14-ounce) cans fat-free, less-sodium chicken broth
* 2 garlic cloves, minced
* 2 pounds skinless, boneless chicken breast, cut into 1/2-inch pieces
Preparation
Preheat oven to 375?.
Combine first 5 ingredients in a large bowl; drizzle with oil, and toss well to coat. Arrange vegetable mixture in a single layer on a jelly-roll pan lined with foil. Bake at 375? for 50 minutes or until browned, stirring occasionally.
Combine water and next 5 ingredients (through chicken) in a large Dutch oven; bring to a boil. Reduce heat, and simmer 30 minutes. Add roasted vegetables; simmer 30 minutes. Bring soup to a boil.
Instead of using the pre-made chicken broth, I decided to thaw out the chicken stock I'd made several weeks ago. Also, the original recipe called for 1 lb of chicken breast; I doubled this to two and left out the 2 cups of WW rotini pasta the recipe used. If you want to keep the rotini, bring the soup to a boil at the end, add the pasta and let it boil for 10 minutes before serving.

It is yummeh! And not just for a health food either.
I just blend the CC with fruits, splenda, splash of water. If you use all frozen fruits then it'll come out like a smoothie, otherwise it'll be like yogurt. I freeze it for a few hours then eat it. If I keep it in there longer, I'll just put it in the fridge for a while to soften up a little.
I used 1 cup of CC, 5-6 ounces of frozen strawberries, 2 packets of splenda, about 2 ounces of water.

P.S. Make sure you use cottage cheese with no salt added. Makes a huge difference. The regular CC(with tons of sodium) tastes like crap; ot even Nutella could save it for me.
