Did some baking for the holiday!
Pumpkin Double layer cheesecake (I can hardly wait to cut into this bad boy tomorrow! It came out PERFECT)
About 40 Ghirardelli chocolate chip cookies chewy inside crunchy outside
And then my boyfriend requested (just for him to eat not for Thanksgiving lol)some brownies withs Reeses peanut butter pieces so I whipped those bad boys up. Not pretty but so sooo good

I'm with you. I had my "Thanksgiving dinner" last night. A german girl and a Tunisian girl cooked some food up for a couple of Americans that live in the building. It was nice and all but it was no massive turkey gobble followed by numerous pumpkin pies to myself. I'll have to wait until Christmas as well.

This is the cheesecake recipe i followed but I baked mine for 55mins not 1hr+ no one likes dry cheesecake haha

Cookies are my grams recipe
2 1/4 flour
2 lg eggs
1tsp baking soda
1tsp salt
2 sticks butter
3/4 cup packed brown sugar (i used dark so my cookies as a really dark color)
3/4 cup gran sugar
1 1/2 tsp vanilla
melt the butter first then mix the butter sugar brown sugar and vanilla together-the butter should melt the sugar a bit. let it cool to room temp then add 1 egg at a time then blend the flour salt and baking soda together and add it to the sugar/butter/eggs a half at a time. put your cookie sheets in the freezer first and let the cookie dough chill in the fridge for an hour or so. bake at 375 until slighty golden at the edges and still gooey in the middle maybe 8 mins or so I just keep an eye on them.
the brownies are just a basic fudge brownie with a bag of reeses peanut butter chips thrown in. extremely tastey and not complicated. :-)

Here was my contribution to my family's turkey day dinner...
Grilled Portobellos Filled with Wild Rice-Almond Pilaf and Grilled Red Pepper Vinaigrette
Ingredients
* 8 medium-sized portobello caps
* Olive oil
* Salt and pepper
* Wild Rice Pilaf, recipe follows
* Grilled Red Pepper Vinaigrette, recipe follows
* 1/3 cup sliced almonds, toasted
Directions
Heat grill to high. Brush both sides of mushrooms with oil and season with salt and pepper. Grill caps until golden brown on both sides and just cooked through, 10 to 12 minutes. Fill the caps with the wild rice pilaf, drizzle the piquillo vinaigrette and sprinkle tops with the toasted almonds.
Wild Rice Pilaf:
1 1/2 cups wild rice
3 cups chicken stock, plus 1/2 cup
2 cups water
Salt
2 tablespoons olive oil
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
1 cup dry white wine
2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
Freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
Place wild rice in a colander and rinse well with cold water. Combine 3 cups of the stock and the water in a large saucepan with a tablespoon of salt and bring to a boil. Add the rice and cook until the grains open and are very soft, 1 1/2 to 2 hours. Drain well.
Heat oil in a large saute pan over high heat. Add the onion and cook until soft. Add the garlic and cook for 1 minute. Add the wine and cook until reduced by half. Add the cooked wild rice, thyme, rosemary and remaining 1/2 cup of stock and season with salt and pepper and cook until heated through and flavors combine, 15 minutes. Remove from the heat and fold in the parsley.
Grilled Red Pepper Vinaigrette:
About 2/3 to 3/4 of a 16oz jar of grilled red peppers in water, chopped
1/2 small red onion, coarsely chopped
8 cloves roasted garlic, peeled
1/4 cup aged sherry vinegar (substitute red wine if sherry not avail.)
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
1/2 cup canola oil
Combine peppers, onion, garlic, vinegar, honey, mustard, and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified.
It's pretty involved, but the end result is well worth it....PULVERIZE!!!

I know Thanksgiving is the worst time to be health concious, but I made a delicous semi-not bad for you pumpkin cheesecake.
-3x8ounce FF cream cheese
-15 oz canned pureed pumpkin
-3 whole eggs + 1 yolk
-1/4 cup FF sour cream
-1 1/2 cups granulated Splenda
-1/2 teaspoon of cinnamon
-2 tablespoons flour
-1 teaspoon vanilla
-1/8 teaspoon ground nutmeg (optional)
