2 poached eggs with a 'ginger-habenero-soy marinated chicken breast'. Didn't know what else to call it...

Spinach-stuffed chicken breast
10 oz spinach
1/2 cup non-fat cottage cheese (small curd)
1/8 tsp garlic powder
1/4 tsp salt
1/3 cup dry breadcrumbs (or 1 slice of bread crumbled)
1 egg white, lightly beaten
~3 lbs chicken (about 6 breasts)
Combine all ingredients except chicken. With chicken, cut a slit starting in the thickest part of the meat to form a pocket. Stuff the pocket with as much spinach as you care to... but the more you put in, the harder it'll be to close. Mine were so full they stayed open instead of sealing back shut. If cooking indoors, grill on a pan using medium-high heat for 7 minutes each side or until chicken is done.
Nutrition per serving (assuming 6 servings): 402 cals, 8g fat, 5g carb, 73g protein.
