Oxygen magazine's Stuffed Roasted Red Pepper

I tried out this recipe tonight from the Sep 2008 issue and it was delish, simple to make - only 5 ingredients - and took me all of 10 minutes including cleanup! Nom nom nom nom

The recipe called for canned or jarred red peppers but I bought a fresh one, cut the top off , removed the insides and then submerged it in boiling water for about 5-7 minutes until soft.

Mix together then stuff in pepper:
4oz of chopped chicken breast (warm)
    .25c cottage cheese
    1/4 tsp minced garlice
    minced red onion (my addition)
    black pepper (my addition)

    Cal: 171
    Fat 1g
    Carb 9g
    Dietary Fiber 1g
    Sugar 5g
    Protein 31g

Note: My pepper was big so I used closer to 6 oz of chicken & .5c cottage cheese.

    Oh man. That sounds good.
I invented something similar the other night. But it was enchilada style. So good.

Could Mozerella Cheese be used in place of Cottage Cheese? I really don't care for cottage cheese but I love stuffed peppers.

It might work if you melted the mozarella cheese. It needs to bind with the chicken.

sounds good. Have you tried their Turkey meatloaf? It is AMAZING!

    Ingredients:
