Mainly because you can drink them down easily in protein shakes. Very clean carbs as well. Eating one right now actually.

You know they should be cooked?
Actually, that's a good question. Does everyone cook/hydrate the oats before eating them, or do some of you eat them like musli?
I cook them up with milk and water and a little salt and butter, then when they are nicely hydrated, and the mess is gloopy, i slap them into a bowl, add some fresh milk and chow down.

I cook them if eating them by themselves, which I seldom do. I normally just throw them into the blender uncooked and make a protein shake, goes down easy.
Cereal made out of oats is not as good as oats... reason being they are SOOOOOOOOOOOOOOOOOOOOOOOOOO processed, the benefit of the oats low GI is lost once its processed into cereal, not to mention the added sugar. If you are gonna buy oats, old fashioned are your best bet. STAY AWAY from the prepackaged flavors oats, quick oats are fine but still old fashioned is your best bet.
