you can do intervals with nearly anything. I always preferred to do it on the exercise bikes.
You will probably only need about a 20 minute session at most. I'd say do your standard warm up, then pick a resistance level of like 8-10, and do that for 1 minute. Then have the interval setting to like a resistance level of 3-5, and do that for 2 minutes. After 5-6 full intervals, do the cooldown, and you should be good.
When I personally did HIIT on the bike, I would do something like this (although their crazy machine had 2 minutes for higher resistance and lower resistance), and I would shove the rpms up to 105-110 on the resistance 8, and would drop to 80-85 on the resistance 4.
