I stirred and put in the fridge over night upside down but it still looks oily on top. Does it have more grams of fat on top than it would on the bottom?

Leave your jar upside down for 2-3 days. The oil willl make its way to the top (the bottom of the jar). THen you stir it. This will make it evenly distributed.
But yes. The peanut oil is where the fat is. And with my OCD I like to keep things as even as possible.The Iron never lies to you. That's why I keep it evenly stirred.
I don't even use tbsn's anymore. I weigh it out now, its actually quicker/easier and more accurate.

On a side note, if you were to empty the oil out and just eat the hard unmixed part is so fuggin delicious. Texture isn't to good and you're wasting the best parts but it tastes phenomenal.
