Healthy Oatmeal-Pumpkin Pancakes
I found this recipe online. I made these pancakes and they were pretty good. Here is the recipe just in case anyone else wants to try.
* 2 c whole wheat flour (I used Coach's Oatmeal instead) .
* 1/2 tsp allspice .
* 2 tbsps brown sugar (I use Splenda Brown sugar baking mix) .
* 1 tsp vanilla .
* 2 c nonfat milk .
* 1 c canned pumpkin .
* 1/2 tsp salt .
* 1 tsp cinnamon .
* 1/2 tsp ginger .
* 2 1/2 tsps baking powder
* Raisins and pumpkin seeds if desired.
Directions
* Step #1 Mix all the dry ingredients well.
* Step #2 Mix all the wet ingredients in with the dry ingredients until there are no clumps.
** PAM No-Stick Cooking spray**
* Step #3 Cook on medium heat until the edges look dry, then flip.
* Step #4 Remember, these pancakes will be dense & thick.
