Question Eggs ahead of time?

Ladies!!!

I've been looking through past threads and it seems many of you cook everything on Sunday for the week. Over the many years of attempting to eat clean, I've found that my downfall is because I haven't been preparing ahead of time!

I'm IN LOVE with eggs, especially scrambled eggs. For my 1st meal I'm looking to have oatmeal with a scramble of eggs, brocolli, and fat free cheese.

Basically - Will the scramble stay good in the fridge for a week? Any tips on keeping them tasting great? I read in another thread about ziploc-ing and boiling eggs... maybe that could work? Just boil 5-6 and throw em in the fridge....

Any other tips you have would be fabulous! Thanks in advance

Most food is only safe in the fridge for 3-4 days.

Hard boiled eggs still in the shell are good for a week, otherwise only keep them 3-4 days.

Yum, yum, yum....sounds soooo good. I think I might have to do this as well....my problem is that I am cutting and only eating egg whites. At just 15 calories a pop means that I have to cook ridiculous amounts for it to last any length of time for both myself and my boyfriend....

i wouldn't cook scrambled eggs ahead of time, that's the one thing i don't do it with. if you are using the pasteurized egg whites, i would say 3 days tops. i agree with terracotta, i don't store food in the fridge. when i cook, tomorrow's food goes in the fridge, everything else is in the freezer! much safer there.

Egg Beaters can be microwaved.

I personally cook my Egg Beaters in a pan every morning. It takes a couple minutes...spray pan w/pam spray, heat on high, pour eggs in, cooks in 2 minutes if that. Real eggs would take just a bit longer as you have to crack the eggs and mix them, but still would not take long.

I know from experience cooked eggbeaters and eggs will last a weekend. Mine normally get cooked on Friday afternoon and go in the cooler for Saturday and Sunday on weekend trips. Its possible to mircrowave real eggs as well as eggbeaters. This morning I had 2 real eggs and oats microwaved.

I make 'french toast' with mine. 1 cup egg beaters, 1/2 cup dry oats mixed together with a pinch each of splenda, vanilla extract and maple extract. I sub in real eggs when I need the fat. Microwave in bowl for 2 minutes until solid, put on paper plate and then microwave for 1 more minute to make a 'cookie' out of it. Put each in a plastic bag and stick in the the fridge or cooler. I use the plastic bag like you would a candy bar wrapper to eat it on the go so I don't get my hands dirty while on the go.

You can follow the same protocol with the broccoli and cheese. It might better to cook them twice a week instead of once a week for freshness. But if you have the ingredients pre-portioned, it will only take 3 minutes in the microwave to cook them.

Old eggs are nasty and not worth it. A chicken breast I can understand, but eggs must be eaten STAT once cooked (scrambled especially).

If you are 'proficient' in the chicken, you can crack open, whip up and cook scrambled eggs in 5.5 minutes. Yes, I timed it. Add 10 more for eating and washing.

And for those of you (i.e. Miss Canada) eating only egg whites, may I suggest you to reconsider the inclusion of the yolk, whether dieting or not. At least 1-2 per each occassion eggs are eaten.

I eat whole eggs and yolks, but when your low-calorie you can't eat too many at 70 cals a pop!

Plain yes, but they are yummy with the flavoring, even cold out of the cooler after two days. The flavoring and splenda makes all the difference.

terracotta - thanks for the website!! Definitely an eye opener.

I'll have to change my plan & just make the eggs the morning of, or try the "cookie" recipe... yumm!

eggs

I microwave my egg whites daily... Its quick and I don't have to worry about them spoiling. Just keep your veggies cooked and ready to add to the eggs about half way through the cooking process. And don't forget a paper towel over the top of your dish to keep clean up to a minimum. (exploding eggs are not fun to clean out of the microwave)


Just a quick and delicious recipie... 4 egg whites, 1/2 package of a vanilla meal replacement (I like Myoplex) and 1-2 teaspoons of pure lemon juice... Combine and microwave till almost cake like... Good cheat with out the cheat...
