My favorite way to eat CC - which I eat every night is:
1 cup CC
1 packet Splenda and 1 packet Stevia
Vanilla Extract
2 tsp of Instand SF/FF Pudding (my current fav is chocolate fudge)
a lil water
Lots of Ice
And Blend! I like mine really thick! I then usually put 1 tbsp PB in a little cup and dip the PB in the CC w/ a spoon....
Another way I eat CC is just to mix the pudding and PB in it....

TAPATIO is a really good HOT sauce...find it at most groc. stores...i put it on everything....i don't know what i would do without it....it's wayyyyyy better than, say, Tabassco....i hope you can find it
DINNER....seared soy sesame salmon and steamed vegies (trick for salmon...don't over cook....take it off the heat probably before you think it's done and let it sit for a sec)
i put a splash of soy, a drizzle of sesame oil and some garlic salt and fresh pepper on about 15-20 min before i seared it
the only weight you should be concerned with......IS THE ONE YOU'RE LIFTING !!!

This is the recipe I used:
INGREDIENTS
3/4 cup uncooked white rice
2 cups milk, divided
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup golden raisins
1 tablespoon butter
1/2 teaspoon vanilla extract

DIRECTIONS
-In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
-In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
Note
This recipe may also be made using Splenda? instead of sugar. Use 1/3 the amount. This is an easy way to enjoy this great creamy recipe but cut down on the sugar and calories.
*I used Splenda and left out the raisins and butter. I also modified the amounts so that it was enough for me. Then I just added blueberries and a tbsp of SF/FF Instant Pudding*

I LOVE THIS THREAD!!! I'm in peaking phase and although I can't eat alot of the combos due to starchy carbs and fruit~ I am thoroughly enjoying the pics!!!! Keep them coming!
I'm having my favorite clean cheat tonight: chocolate protein pudding, 2 T fat free cool whip, 1 t dark chocolate syrup drizzled over the top with a couple of roasted sunflower seeds for garnish. If I'm feeling really greedy, I'll throw a tablespoon of powdered peanut butter in with the pudding...so goodWhen God closes a door, he opens a window.

that "cheat meal" sounds pretty damn good!
dinner...salmon avocado lettuce wraps deeeelish..haven't had avocado in ages
the whole dinner was ...12 fat....18 carbs...24 pro...and ONLY....275 cal ...... (aaaahhh...definitly room for choc. pro pudding)

1/5 avacado
boston lettuce
1/2 c. broccoli
1/2 c. cauliflower
1 c.tomatoes-cucumber cilantro salade

3 cheese and turkey ham pizza
Hi, my pizza doesn't look as professional (the base came out in 2 pieces out of the oven ) but my recipe is probably quite similar based on the look of it and the total calories:
3 cheese and turkey ham pizza
1 wholewheat tortilla or chiapatti
tomato puree or sauce
1/4 onion
1/4 red pepper
garlic to taste
3 cheeses (I use 1 0% fat cream cheese on the base, then top with 1 cheese at 3.5% fat and grated cheddar at 8.5% fat)
1 slice of 1% fat turkey ham
The tortilla/chiapatti is the pizza base. Spread the tomato sauce/puree over it and then the cream cheese. Top with the red pepper and onion, garlic and the 3.5% fat cheese. Add the turkey ham on top (diced or in strips) and top with the grated cheese.
Put in the oven at 350 heat until the cheese is golden on top.
I like eating it with a side salad.
Enjoy!

Ingredients
Oat Bran - 15g
Powdered Eggwhites - 15g
Or
2 Fresh Eggwhites
Tomato Paste (my favourite is Italian Pomodoro in a tube) - 20g
Mushrooms - 100g
Baby Spinach leaves - handful
Jalapenos, chopped - 10g
Anchovies - 10g rinsed
Parmesan cheese, good quality hard, grated on fine grater - 23g
Feta cheese, preferably goat, crumbled - 20g
Oregano (fresh if possible)
Basil (fresh if possible)
Preheat grill (broiler)
First, chop the mushrooms and sautee in water till the water evaporates
Second, the Buffycat inspired base. Please follow directions carefully! Get a skillet pretty bloody hot. - preferably well seasoned cast iron - so you can transfer to the oven. If you don't have one of these, make sure you have a baking sheet ready.
CRUST METHOD 1 (powdered eggwhites)
Mix together
15 grams oat bran
15 grams dried egg whites
5 grams psyllium (not STRICTLY necessary)
some spices of choice - I usually go for a little garlic powder, cracked black pepper, a little chili powder mix the dry stuff together well, and SLOWLY add COLD WATER just enough to moisten
CRUST METHOD 2 (fresh eggwhites)
Mix together
15 grams oat bran
5 grams psyllium (not STRICTLY necessary)
some spices of choice - I usually go for a little garlic powder, cracked black pepper, a little chili powder
mix the dry stuff together well
Whisk up 2 x dried egg whites
add the whisked whites to the dry mixture - this should be enough to just moisten
now this is quite tricky and you need to be quite quick - spoon the mixture into the hot skillet, and quickly spread it out with the back of the spoon - honestly it will be ready to flip by the time you get it spread so be dexterous! Flip it over and turn the burner off.
Flip it over again. If you are using a cast iron (oven proof skillet) leave the base in it, if not, transfer to a baking sheet.
Spread the tomato paste on base, sprinkle with oregano and basil to taste.
Cover with a handful of baby spinach leaves and whack under grill for about 30-60 seconds, just until leaves wilt.
Take out of oven, and arrange the rest of the ingredients, mushrooms, cheeses, anchovies, and jalapenos - pop it back under the grill until it's melted gooey goodness, 1-2 minutes.
CALORIES - 277
CARBS - 20g
PROTEIN - 28g
FAT - 13g
I also use the base for loads of other things, I love to mix ricotta with grilled sardines or smoked salmon or tuna and capers and make like a pate to spread on - I often pack this for lunch, I simply make up the base, cut it in half and toast it when ready...really yummy bread replacement!Last edited by kitebean; 06-28-2008 at 03:04 PM.
