Start a program that will build a solid foundation and give you strength. Once you have a solid foundation, you can branch out. Building the foundation will increase your strength, muscle size, and decrease your body fat.

For the constant sweating, water and something with electrolytes to replenish what you lose. If you get some input on when your shift is try to get it when there is least sunlight, and dress down or in light colours as much as you have an option (as I know many uniforms are mandatory).
Despite all the walking that doesn't mean you have to lose muscle, despite all the ridiculous horror stories people tell about long-term cardio. What it means is you have to remember to replenish the calories lost while doing this in addition to the ones you do while exercisig. You don't want the glycogen to get so low that your proteins get broken down as fuel.
When you're strength training, your body prefers to burn fat for fuel when using the aerobic system anyway so I don't even think it'd be that huge a problem.

PB and J's, cans of tuna, protein bars, fruit.... if you're really commited to your training and diet it would definitely be worth it to carry around a backpack with a cooler/lunch-box if you are able to.

peanut butter and banana sandwiches on a calorie dense multigrain bread should work. throw it in a sandwich bag, and keep it in your pocket or satchel. nuts, dried fruit, and raw oats are all easy to eat on the go.

The best way to get in a lot of calories is to eat high fat foods. If I were you, and I'm glad I'm not , I'd be eating TONS of eggs, whipping cream, lamb, fatty beef, etc.
This may not sound "healthy," but consider that you'll be utilizing an unholy amount of fat for fuel w/ all that walking.

I think Gatorade might be good. A lot of people hate on sports drinks for their calories but he needs them.

Lots of walking shouldn't be a problem, as far as building muscle. You'll simply need to eat more, and more often, to offset the calorie deficit. Buy a cooler, and fill it with chicken or steak sandwiches, fruit, raw veggies, cans of tuna, whatever it takes to feed yourself every 3 hours, or so. Is it a hassle? Sure. Will it work if you take the trouble? Sure.
I went from 130 pounds to 200, 10% bodyfat, working construction, all year round, and training 4 days a week. There's always a price to be paid, in building muscle; if you want it, you'll pay it.
