I bought them a while ago. Like 3+ weeks maybe? They look fine, but have small little red roots coming out... 1/8th inch. Bad yet? How do I know?

Other than the "sprouting", potatoes keep for a REALLY long time.

should be fine, oven or microwave it , and it should kill the roots, and if you don't eat the skin your just throwing it away anyways.

You will know when sweet potatoes go bad. They will start to become softer, sometimes mushy, and noticeable mold will start to form.
