Question joint pain and popping

Hi all,
I am new to lifting so I am not lifting heavy weights yet but when I do any exercises with my shoulders I get a popping noise and I feel the pop too which is more irritating than painful.
The thing that is really bothering me more than that is the pain in my joints though. I can't sit cross-legged without it hurting in my knees and also when doing squats with the bar across my upper back and light weights--say 7.5 on each side I get pain in my elbows, shoulders and wrists that is alleviated when I pull out of the position (i.e. put the bar down and let my arms relax) It's not muscle pain-it's in the joints.
So, I am wondering if anyone else has this at all? Are there stretches I could maybe do to help? Or do you think this is one I should go and see a dr. about? I am somewhat worried because I started to lift after I had a very severe case of rheumatic fever in Jan. I had extreme joint pain for a month and it took me to the middle of march before I felt mostly normal again. I also went to a plant based diet at the beginning of the year. Is it possible my joint pain is from a lack of healthy fats? I'm just grabbing at anything here really since I don't want to go back to those dr's, but I need to stop the pain as it is slowing my progress.

Jean, my advise is to go and have an ultrasound of the joint.
Find out if there is water inside between the tissue. I'm not a doctor, but going to the doctor is always a waste of time if you go without at least two views of the joint (X-RAY) and one ultra sound. It might reveal a lot, if you are holding water, or if there is an inflammation of the muscle or tissue and you might need to put ice then hot water compressions, or just a something to lower the inflammation.
