Happy Easter
Hope everyone has a nice day. What are everyone's food plans today? I'm a college student, so I'm home for the weekend. I woke up this morning and my mother had made me eggs, steel cut oats with berries, ezekiel bread and coffee! She knows me too well! What are y'all eating today?

When you said happy easter I thought you were going to stun us with an amazing Easter-esque dinner.
Anyway, normal huge Sunday mediterranean style breakfast, with hot cross buns thrown in for that 'Easter' thing.

Haha, well, I'm going back to school today, so we had Easter dinner last night. Mom made flank steak that marinated all day--kept it real rare and sliced it real thin. She also made some cheesy cubed-hashbrown potatoes, a nice spinach salad, fresh garlic-butter green beans and raisin bran muffins...It was unbelievable!

I live in Michigan and the rest of my family is in Cali. So I am not treating today like anything different from a food standpoint because I have no one to celebrate with.

I just had roast leg of lamb, mashed potatoes w/ lamb gravy, green beans, some rolls w/ butter, and my mom's in the process of preparing our "Baked Alaska", which is a layer of cake, a layer of ice cream, and a layer of meringue coating that.
My mom also got me some organic macaroons with the ingredient list: unsweetened coconut, honey, and eggwhites. Nice little treat for endurance athletes/cardio bunnies like myself.

Just a normal day for me. I'll probably make a turkey meatloaf tonight when I get home from work.

Happy Easter and God bless everyone here. I'm sure those of you who were observing Lent are also happy to be eating meat again, or perhaps whatever else it was you forgave for penance.
