    Good/Easy Boneless Chicken Breast Recipes?

    As a college student boneless chicken breasts are my best friend... Less than $2 a pound can not be beat.

    However my culinary skills are about a 3 out of 10, and I am looking for some good recipes to make the chicken taste good. I have one... Not the healthiest on a cut, but certainly a good meal on a bulk.

    Cheesy Chicken Casserole
    -About 4 chicken breasts
    -Can of Cream of Chicken and Mushroom soup
    -Some Mayo (Low Fat Probably)
    -Cheddar Cheese (sharp is awesome)

    All you do is boil up the breasts, then shred them up into a bowl. Add the can of soup and about 3/4 a cans worth of mayo (can add more until you like the consistency)... mix this all up with a spoon and mix in about a half a bag of cheese. Put this in a casserole dish and put a layer of cheese on top. Cook it for about 20 mins on 350.


    Its really freaking tasty, and it can be made pretty healthy if you use low fat mayo, low fat soup, and low fat cheese. Just DON'T use miracle whip!

    What I like to do is use the Cooking Light's recipe finder to browse through different recipes. Unfortunately, since it's owned by the same people as Southern Living and Sunset magazines, their not-so-light recipes are mixed in along with CL's. However, if you pay attention to the source of the recipe (which you can see before clicking the link) you can often find great ways to cook virtually any type of food easily and quickly.


    edit: I just realized there's a way to narrow it down to recipes from particular magazines. Here's the Cooking Light subfield for poultry:

    You can make a plain old chicken breast taste really good if you bought a few 2$ bottles of spices. There are soooo many of them in the supermarkets you can pretty much find any flavor of anything you want. When I'm in a hurry and/or lazy I just wet the breast and pour some spice ontop of it and cook it for a while. Comes out tasting pretty good.

    If I want to get into it, my 2 favorite recipes so far have been to marinade the chicken breasts in a low sugar bbq sauce or a teriyaki sauce. If you make it with the teriyaki sauce the best spice to combine that with (in my opinion) is paprika.

    I'm not the best cook either but those ways are very very simple and make the tasteless chicken breast full of flavor.

    What I like to do with chicken is the following.

    Take your favorite dipping sauce (whether it be mustard, bbq, ketchup, etc...), rub it all of the chicken. Then cover the chicken with seasoned bread crumbs or oats. Bake in a 400 oven for about 20 minutes. Leaves a nice crust and the chicken is always moist. Delicious!!

    Heres a cutting one, all you need to do for bulking is add some rice to it.

    saute some garlic in a frying pan, add some diced chicken breast and let that cook.

    Next add some mushrooms and brocolli, as the mushrooms cook they release water and that steams them brocolli.

    Season to taste.
