how do you make good grilled chicken? (the chicken tastes like wood)

my grilled chicken tastes like ****!!! well its not actually grilled, first of all, i don't have a grill, i use a frying pan with grooves in it. i use non- fat, 0 calorie cooking spray and have tried marinating in several kinds of marinade, but they all suck. i love the ones they serve at greek restaurants but no one gives up their recipie, i'd order it from there but a plater is like $10 and i can't afforrd that 4 times a week. any suggestions????

Have you tried finding a bbq sauce you like and smothering the breast in that? Poke holes in your chicken before you marinate it...I was broiling some the other day and would periodically pour corona (beer) with lime in it on them and they came out moist and awesome. Try franks red hot chicken wing sauce on your chicken too...gives em a sort of buffalo wing flavor, with the load of fat that wings have (Something like 8g's a piece!)
-Just a few tips..hope it helps

I hate eating chicken plain, so what I do is cook up a breast and cut it up into small pieces, then I throw on 2 slices of fat free cheese and let the melt. Then I wrap them up in a low carb whole wheat soft taco type shell. The shells have 12g of carbs with 9 of them being fiber! I eat these once or twice a day.

    Greek Lemon Garlic Chicken

Here's a VERY simple (low carb) recipe for Greek style chicken:

2 tsp. finely grated lemon peel
    3 tbsp. lemon juice
    3 tbsp. olive oil
1 tsp. dill weed, dried and crushed
    1/2 tsp. fennel seed
    1/2 tsp. garlic salt
    1/2 tsp. freshly ground pepper
    4 whole chicken legs

    Directions:
In any non-metal container, combine lemon peel, lemon juice, oil, dill weed, fennel seed, garlic salt, and pepper. Add the chicken and turn to coat completely. Marinate for several hours or overnight.

Grill or broil chicken over medium heat until browned, brushing with marinade. Grill or broil until done.

ok, when i want some chicken in a rush i just tenderize it by basically punchin holes in it with the fork...then i sprinkle on some garlic and herb seasoning and some seasoning salt. its quick and easy, and you dont have to let it marinate for like an hour to get the full flavor. If ur using marinades and sauces, the need at LEAST an hour in the fridge to taste like they should, otherwise whatever u put on the chicken breast just kinda sits on the outside and gets burnt off when u grill it. it needs time to "seep in".

I like to add crushed red pepper, or cayenne pepper to my chicken breasts. As well as putting it in the pan with extra virgin olive oil and a diced clove or 2 of fresh garlic...if it gets dry, just use lemon and squeeze it all over the top an dpoke light holes in it, don't get too deep or all the natural juices are gone!!!

I like to put a little Jerk seasoning (Jamaican) on my chicken and toss it on the grill. Sometimes when I pan fry chicken/porn with jerk I toss a little bit of coconut rum in there at the end and light it on fire to get a nice rum glaze.

A good Greek marinade (we made Greek Kabobs a few weeks ago for a themed party), some garlic, tyhme, rosemary, oregeno and some lemon juice. (to flavor, idk how much of each you really like) Toss all that and some chicken into a gallon sized bag and shake. Marinate for like 30 minutes, the lemon is going to do a little bit of cooking because of the acid, don't let it sit too long or it'll make things weird. Cook and serve.
Any an all weird freaking spelling errors are becaus I'm typing on my iPhone which autocorrects to the weirdest things now.

You might try brining the chicken breast 24 hours before you cook them! A jakarr tool is nice to have around to tenderize any meat! Has needles on it and pokes little holes in the meat then throw it in some marinade for a couple of hours all of the holes soak in the marinade. I cook chicken breast this way 7 minutes on one side and 7 minutes on the other side and you should be done all the way through and for gods sake let the meat rest after taking it off the heat for about 10 minutes that way it stays moist before you cut into it! I'll try to post some chicken marinades and brines that I use here in a while!

Get chicken thighs over chicken breast if you're currently eating that.

Chicken thighs are going to have a ton more flavor and I prefer them over chicken breast personally.

    Would love to know too....
I tried once before a recipe I found, but didn't taste the same.

I have been doing a crock pot for a while now....and that works good.

When doing on the stove, you can try that seasoning by McCormick...Montreal Chicken seasoning
    Then I put a lid on mine, 10 min....flip 10 min...flip 5 min, flip 5 min
Covered the whole time, 30 min total.

Marinading chicken in Italian dressing is one of my favorites, general tsao sauce or any hot sauce works as a marinade as well. For grilling i will always prefer a dry rub-type thing though; salt and pepper with montreal chicken seasoning, a mix of garlic/onion powder and italian seasoning, basil and add some lemon juice after cooking.
Basically make up some frankenstein-type mixes until you find what u like

Those are almost always cooked on a flat top grill. Your pan at home won't hold that kind of heat. Invest in a good cast iron skillet. Anything requiring any kind of searing really needs to be done in cast iron to be done right.

Ugh, ditch that. Get a flat pan, no grilling ridges or anything. A well seasoned cast iron cleans in about 30 seconds. I can't say I've ever tried to make chipotle's chicken though. Not sure what their seasoning is or if the recipes floating around are accurate.

Got an example anywhere? Nothing online really matches it. I'd like to have a nice grilled taste although similiar. It could be some odd flavoring they add to the chicken. Unsure.

if you boil it its so good man. put water in a pan and boil your breast until its just nearly done, check this by cutting the breast in half, then when its nearly done turn the heat off. let it stand for 5 mins in the hot water take it out then get two forks and shred it up (like pulled pork style). then add bbq sauce or hot sauce or any sauce u like then put in a frying pan for 3-4 mins so it gets sticky its awesome!
