Would it hinder my workouts if I started my reps with the heaviest weight that i can do 5-10 reps of then decrease the weight by each rep, as opposed to increasing the weight with each rep?
Example:
Dumb bell curls
rep 1: 30
rep 2: 25
rep 3: 20

What OP described is by no means a drop set. Search drop sets.
OP, I wouldnt drop the weight every set. I would do something more like:
3 five rep sets
Drop the weight
3 ten to twelve rep sets.
Or
I usually do 1 benchmark exercise for.a.muscle set (always first in my routine) for 5 reps sets
Followed by the rest of the lifts at 8-12 reps
