Ugh. I wish. She makes this stuff just for fun or for when friends/family ask for something, otherwise she will whip something up...take some to work...and leave the rest at home for me to walk past 10 times a day and try not to stuff myself. Id love to see her go into business and make some extra coin with it!

(1) Double sift (or sift then whisk or just whisk, up to you) these dry ingredients into a bowl:
1 cup AP flour
2 tablespoon splenda (or sugar)
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
(2) Melt 2 tbsp butter in a bowl
(3) Once melted, add 3/4 cup buttermilk and mix
(4) Add 1 egg and mix
(5) Add dry ingredients to wet and mix until lumps are removed but not anymore. Fold in chocolate chips (I added 70-80g). The pancake mix will be incredibly thick and difficult to pour, which is normal. This isn't a runny or thin batter.
(6) Grab a 1/4 cup measurement, fill it up, level it off and drop it in in a pan. I did it over medium heat and use canola spray to lightly coat it. I also used a rubber spatula to spread it out on the pan into the shape I wanted.
Note: Keep a close eye. Mine were thick enough that the usual indicator for doneness (bubbles on top) did not happen, so I kept an eye on the edge. Since temperatures can vary from pan to pan, adjust if your pancakes don't cook all the way through.“Go back?" he thought. "No good at all! Go sideways? Impossible! Go forward? Only thing to do! Took my mom out to dinner, and told her to pick the place. She chose chipotle of course.. she LOVES the salads. lolol. Gotta love cilantro rice and chips and salsa ftw!
