Eric you are right that the body is NOT going to start putting together a protein when it does not have all the essential amino acids but the body does store these essential amino acids for up to 3 weeks on average. This is how vegetarians can get away with not eating multiple protein sources in one day. If they switch it up throughout the week they should be perfectly fine. So your body at any given time should have all the amino acids need to make any protein. Now if you didn't don't have it stored in your body then you have a more serious problem being an amino acid deficiency which can lead to many severe health effects but if your switching up proteins sources with various nuts (almonds, walnuts, peanuts, flax seed, pistachios, etc.) and various legumes (black beens, pinto, soy, etc.) than you should be fine.
I mean imagine if a vegetarian had to eat multiple protein sources everyday just to survive, this would be extremely strenuous. Luckily, our bodies are masters of nutritional storage. Also I recommend any vegetarian to take a full aminoacid supplement at least once week.
