Hi Merry Christine ,
Re the importance of red meat , I'm all for it however there is something you should know about kangaroo meat in particular.
Kangaroos are field shot & dressed ( albiet under as hygenic conditions as possible- this is fairly strictly controlled ) Then the carcass is taken to a processing plant where it is inspected boned out & packaged.
what you dont know about are the amount of parasites in the muscle meat itself ,( not to mention the Roo is a carrier of hydatids.)
some of which are only identifiable by laboratory inspection , hence the meat if for human consumtion should be very well cooked. Field studies in QLD by CSIRO
have shown that approx 26% of Roo's studied carried parasites in the meat.
In my experience in the Southern Highlands of NSW more than 50% of the adult roo's carry some very nasty looking worms in the meat - as I read somewhere the only thing game about Kangaroo is that you have to be game to eat it. (I hear that Emu's also carry parasites but cant confirm that )

I am not a Greenie and I actually condone the shooting or culling of Roo's having done it professionally some time ago.

The message is Be Carefull - I consider it only fit for dog food & only after it has been trimmed cubed & boiled for at least 15 - 20 minutes.
this information is not common nowledge unless you live in the bush & seems to be hushed up by those who make money from it.
I just think it is to important a subject to be hushed up.
