Thumbs up Coconut Bark!

If you need a way to increase your coconut oil consumption, look no further

you'll need:
1 cup coconut oil
4 - 5 tablespoons cocoa (find cocoa that has high fiber to minimize carbs)
4 - 6 packets splenda (add more if needed)
100 grams or so ground peanuts (optional but HIGHLY recommended)
1 - 2 teaspoon flavoring extract (optional)
shredded coconut (optional)

1. melt coconut oil to liquid in microwave or pan.
2. add cocoa, splenda and flavoring extract ONE at a time and mix.
3. take the mixture and put into ice trays or individual baking cups.
4. sprinkle the ground peanuts.
5. sprinkle the shredded coconut.
6. put in ref until it hardens. I leave it there overnight.

That'd seriously damage the lauric acid in the coconut oil destroying a lot of its natural properites though. You'd be better off doing it in a bain marie type arrangement IMO.

i have no idea what a "bain marie" is lol

im not talking about heating it up til boiling point. just put it on the stove on very low heat til the oil melts then turn off the flame.

coconut oil melts at 75°F/24°C but its smoking point is 350°F/175°C so just turn off the flame when the oil melts and the oil wont be damaged.

that depends on the size of the cups you will use. it is very calorie dense though and easy to overeat because if you added the grounded peanuts (peanut powder), enough splenda to sweeten and a little imagination it tastes a bit like peanut butter cups

you could try it with a smaller batch first to see if you like the taste. just use half or a quarter of what the recipe states. hope you like it

Basically put it in a bowl in a bigger bowl filled with hot water.

You shouldn't microwave it at all though, that will ruin it, without it ever getting hot. If you want the immune system benefits etc of the lauric acid of course.
