pierce it in its soft eye (one of the three dots is soft) and drain the fluid (drink it), then put the coconut in a bag, hold the bag and swing it into the floor/a wall, thus fragmenting the coconut and keeping the pieces in one place.
yes, coconut is "good", so removing water from it does not alter that, nor does shredding it or grating it or carving it into little balls. If nothing is added, its no different to normal coconut really, is it.
regarding low fat coconut milk, I think thats a ridiculous idea. Just as bad as low-fat cod live oil, or low fat milk infact.
EDIT: i LOVE coconut, its amazing, but a problem is its fairly high calorie density of 354/100g for the meat. Its really easy to eat a lot of it too.
