Fried Rice?

I generally eat alot of shrimp fried rice, and I always thought it was atleast decent nutrional wise. The "fried" part never crossed my mind. I'm still not sure how its cooked. Is it fried or what? Also, would you consider it healthy (if its not fried of course)?

it isn't fried like "deep fryer" at McDonalds fried, but yes, heating very highly in crappy oil fried... indeed.
