Well end trails, fat and whatnot are still technically chicken, generally with sausages it's the stuff not good enough to me sold as a cut of meat.
Being 100% chicken probably makes them better than a typical pork sausage, but they won't be the best source of protein you can find
That doesn't mean they won't have their use if your bulking, as long as you have other good sources of quality protein then sausages can be a cheap, easy caliorie boost, I tend to go for my butchers own sausages rather than anything pre packaged because I know he won't stick crap in them
