Green Veggies, carbs go above 30 - 40g's a day!
Broccoli and such, If I'm to eat tons of these, how do I keep the carb count down?

When you count carbs from vegetables, subtract the amount of fiber to get 'net carbs'. You'll still want to include calories in your count, however.

and if you eat as much of it as you claim dont eat it all in one sitting....divide it up during the day

I've never heard of anyone being thrown out of ketosis by broccoli as part of a meal, no matter how much broccoli they ate. The only time I'd even think of limiting it was if you were eating a pile of broccoli on its own, with no protein or fat present, and even then I'd be surprized.

a good half of those carbs are fiber. And even though they ARE carbs, you cannot digest them.
Some of the fiber, however, can be digested by the bacteria living in your colon. And they produce fatty acids with it. Those, of course, you can digest, but they are not carbs anymore. That's why some fiber still has calories, even if "we" cannot digest them.

What about cauliflower? I usually eat a massive bowl of broccoli, cauliflower and celery with my dinner, should I be watching how much cauliflower goes in and put more broccoli instead? seems like a dumb question....it's a vegetable...but thought I'd check.
Is it mainly only ones that are green that are okay to eat in unlimited amounts?

Caulifloewr is OK, along with asparagus, celery, aubergine/eggplant, mushrooms.
Eggplant is an underused vegetable, you can cut it into circles & grill or shallow fry in oil. Yum!

fiberous veggies such as Broccoli has about 40 cals per cup. 10g of carb. but theres 3-5g of fiber. im not sure about taking cals from carbs.
