I always eat them. They have a lot of sodium though.
Edit: I think my mom uses organic ones.

As long as there's not a sh*tload of nitrates and preservatives they're great. I have some organic sausages I like to eat, but I get the fattier ones as a sat. fat source. The one's you're eating look fine though.

Sure man, why not. I mean, the sodium content is on the high side but it's not like you're going to be eating them 7 times per week. Are there better alternatives? Yes, of course there are. Will eating them destroy your gains/goals - no.

There's a reason why chicken sausage is so high in fat. They don't use lean chicken breast, they use the leftover parts that are full of fat. You can't directly substitute them for chicken breasts since the fat content of the sausages is a lot higher. Just make sure they fit into your diet and they'll be fine.

8g of fat to 18g protein is not what I'd call high in fat.

They seem fine, and probably taste awesome. Costco's got some good options in the exotic sausage department. Good ol' sausage.

the best chicken saussies I've been able to find are equal fat and protein content per serve
they are delicious on the grill though.

Along those lines I almost never eat chicken breast. Why? I like dark meat better.

On a caloric basis they're 50% fat (72 kcal each of fat and protein). That's VERY high. Again, if the macros fit into your diet it doesn't really matter but there are healthier options.

If that's VERY high, what do you call normal sausage with 180 cals, 8 grams of protein, and 16 grams of fat? And of course, it all depends on what you can fit into your macros, and these sausages are hardly "lean", but say you eat two of them and get 16 grams of fat in a meal? That sounds like a pretty moderate amount to me.
