Smile Pumpkin, Oat Bran & Raisin Muffins

Here is a web recipe that I modified:

Ingredients:

2 cup Oat Bran (uncooked)
1/3 cup Splenda/Brown Sugar Blend* (firmly packed)
2 teaspoon Baking Powder
2 teaspoon Pumpkin Pie Spice
1/2 teaspoon Salt
1/2 cup Raisins
1 cup Canned Pumpkin**
1/2 cup 1% Milk
2 Egg Whites, beaten (or 1/4 cup Egg Beaters)
2 tbsp applesauce
Pam Vegetable Cooking Spray (Butter Flavor)

Directions:

1. Combine first 6 ingredients in a large bowl; stir well.

2. Make a well in center of mixture.

3. Combine pumpkin and next 3 ingredients; stir well.

4. Add to dry ingredients, stirring just until well mixed.

5. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.

6. Bake at 425 F for 20 minutes or until toothpick inserted comes out clean.

7. Remove from pans immediately; serve warm or at room temperature.

Nutrition:

Makes 12 muffins, each has:

108 calories
1g fat
21g carbohydrate
4g protein
3g fiber

232 mcg vitamin A
898 mg calcium
41 mg magnesium
191 mg phosphorus
191 mg potassium
222 mg sodium

Macro Profile:

11% fat, 75% carbohydrate, 14% protein

Notes:


*If u don't have Splenda/Brown Sugar Blend, u could use 2/3 cup regular brown sugar, which would up the calories some.

**Make sure u get canned pumpkin, not canned pumpkin pie filling.
